A few yummy pasta recipes

All these recipes are either ones I've made or want to make! I've been spending the past few weeks looking up recipes online to get a cookbook together!! I will add more that we've recieved from family & friends!!

Better-than-Ever Cheesy Meat Lasagna
Prep Time: 30 min Total Time: 1 hr 10 min Makes: 9 servings

I've made this recipe twice (without the cottage cheese mix because Jeremy don't want to try it so I use an 8 cup bag of mozzarella cheese) my family loves this recipe!!

**Recommendations**
Just from experience...I'd use either a medium can (not sure on ounces but just not the small or large) of tomato sauce or a half a jar of spaghetti sauce because I never have enough sauce when I get to the top. Also, I'm real finicky when it comes to spaghetti sauce so even when I use jars (ie: prego or ragu) I doctor them with spices like: basil leaves, Italian seasonings, onion powder, garlic powder (just a little because you've already got fresh garlic in there!!) & parsley flakes. You can add whatever spices you use for your spaghetti sauce!! Follow the directions as indicated below & just add your "additional" ingredients when your add the sauce to the meat.

· ¾ lb. extra lean ground beef
· 3 cloves garlic, minced
· 1½ Tsp. dried oregano leaves
· 1 jar (26 oz.) spaghetti sauce
· 1 large tomato, chopped
· 1 Egg
· 1 Container (16 oz.) BREAKSTONE'S or KNUDSEN 2% Milk Low Fat Cottage Cheese
· ¼ Cup KRAFT Grated Parmesan Cheese
· 9 Lasagna noodles, cooked, drained
2 Cups KRAFT 2% Milk Shredded Mozzarella Cheese, divided

HEAT oven to 375°F. Brown meat with garlic and oregano in saucepan. Stir in spaghetti sauce; simmer 5 min., stirring occasionally. Remove from heat; stir in tomatoes.

MIX egg, cottage cheese and Parmesan. Spread 1/2 cup spaghetti sauce mixture onto bottom of 13x9-inch baking dish. Top with layers of 3 noodles, 1 cup cottage cheese mixture, 1/2 cup mozzarella and 1 cup remaining sauce mixture. Repeat layers. Top with remaining noodles and remaining sauce mixture. Cover with foil.

BAKE 30 min. or until heated through. Uncover; top with remaining mozzarella. Bake, uncovered, 5 min. or until mozzarella is melted. Let stand 5 min. before serving.

Variation
Substitute 2 pouches (2 cups) frozen BOCA Ground Crumbles for the browned ground beef. Add to spaghetti sauce in saucepan along with the garlic and oregano; cook until heated through, stirring occasionally. Continue as directed.
Makeover - How We Did It
We've made over a traditional lasagna that results in a savings of 140 calories and 10 grams of fat per serving. We replaced the sausage with extra lean ground beef and decreased the amount, used cottage cheese in place of ricotta cheese, decreased the Parmesan and used KRAFT 2% Milk Shredded Reduced Fat Mozzarella Cheese.
Make Ahead
Assemble lasagna as directed; cover. Refrigerate up to 24 hours. When ready to serve, bake, covered, at 375°F for 40 min. or until heated through.

Angel Hair Pasta Delight
Yield 4 servings (serving size: 1 cup spinach mixture, 1 cup pasta, and 1 tablespoon cheese)

· teaspoons olive oil
· 1 1/2 cups chopped Vidalia or other sweet onion
· garlic cloves, minced
· 1/4 cup water
· (10-ounce) package fresh spinach, chopped
· cups chopped plum tomato
· cups chopped cooked chicken breast (about 1/2 pound)
· 1/4 cup chopped cooked bacon (about 2 slices)
· tablespoons balsamic vinegar
· cups hot cooked angel hair (about 8 ounces uncooked pasta)
1/4 cup (1 ounce) shredded Asiago cheese

Heat oil in a large nonstick skillet over medium-high heat. Add onion; sauté 2 minutes. Add garlic; sauté 1 minute. Add water and spinach; cover and cook 2 minutes or until spinach wilts.
Stir in tomato, chicken, bacon, and vinegar; cook 1 minute or until thoroughly heated. Serve over pasta; sprinkle with cheese.

Creamy Chicken, Bacon & Tomato Pasta
Prep Time: 10 min Total Time: 25 min Makes: 4 servings, 1-3/4 cups each

· 3 cups whole wheat farfalle (bow-tie pasta), uncooked
· 1 lb. boneless skinless chicken breasts, cut into bite-size pieces
· 3 slices OSCAR MAYER Bacon, cooked, crumbled
· 1 can (14½ oz.) Italian-style diced tomatoes, undrained
· 4 oz. (½ of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, cubed
· ½ cup water
· ¼ tsp. pepper
3 Tbsp. KRAFT Grated Parmesan Cheese

COOK pasta as directed on package.

MEANWHILE, cook chicken in large skillet on medium heat 5 to 6 min. or until chicken is done, stirring occasionally. Add bacon, tomatoes, Neufchatel cheese, water and pepper; mix well. Cook 3 min. or until Neufchatel cheese is completely melted and mixture is well blended, stirring frequently.

DRAIN pasta; place in serving bowl. Add sauce; mix lightly. Sprinkle with Parmesan.

How to Prepare Perfect Pasta
To prepare perfect pasta, follow the package directions to ensure that enough water is used for cooking the pasta. Add the pasta to the boiling salted water and cook until al dente (tender but still a little firm to the bite), stirring frequently. To prevent pasta from sticking to the pan, add it slowly to plenty of boiling water and stir frequently while cooking. Adding oil to the cooking water is not recommended because some sauces may not cling to pasta coated with oil.
Food Facts
Some cooks prefer to drain the pasta well to prevent excess water from diluting the sauce, while others like a little moisture to help prevent pasta from sticking together. In any case, reserve a few tablespoons of cooking water to add to pasta if it starts to stick together or if you want to dilute the sauce.
